20 Quick Weeknight Meals

In an effort to survive being a working Mama, I must stay organized.  One thing I've done is to keep a list in my phone in the Notes section with every meal I prepare each week.  It is a running list so if I'm in a rut, I can look back at previous meals we've had and get ideas.  I go through spells of not cooking much at all and then I'll cook six nights in a row.  Lately I've been cooking but the only reason I've been able to make it happen is because of meal planning on the weekends and prep on Sunday afternoons!  If I didn't prep and make certain meals on Sundays for the week, we would never eat.  Here it goes:

1.  Shrimp Creole with a caesar salad
2.  Honey meatloaf, green beans and a salad
3.  Quiche
4.  Southwestern Salad
5.  Filet, baked potato, salad
6.  Lobster Cobb Salad
7.  Spaghetti
8.  Shrimp Taco Salad
9.  Low Country Boil
10.  Shrimp Quesadillas with red and yellow peppers
11.  Pesto Shrimp angel hair (I did Molly Anne's and mine with zoodles)
12.  Bow Tie Fiesta
13.  Breakfast for dinner
14.  Sausage, vodka sauce penne with caprese salad
15.  Sheet pan sausage potatoes and veggies
16.  Bacon Jalapeno Poppers Chicken Enchiladas
17.  Cajun Chicken Rice
18.  Egg Roll Bowls
19.  Philly Cheesesteak Grilled Cheese
20.  Crockpot lasagna tortellini soup

  6. I love that you made a quick list to reference; I should do something similar. When the seasons change, it's sometimes hard to think of what were your go-to recipes last year. Yet another way the blog is useful! :)
