Megan has been trying to get me to try Quinoa for the longest time and last week when Kevin wasn't here was the perfect opportunity. I had no clue what to put in it so I winged it and it came out SO GOOD, if I do say so myself! ;)
Quinoa Annie Style
1 cup quinoa
1 14oz. can of vegetable broth
1 14oz. can petite diced tomatoes (drained)
1 14 oz. can garbanzo beans (drained)
4 TB reduced fat feta
3 TB parsley (dried) - or fresh would be better
Salt and Pepper to taste
Directions: Cook the quinoa according to instructions (1 cup quinoa to 2 parts broth - combine on medium heat and cover for 15 minutes). Take it off the heat and add everything else. That's it, enjoy! I'm going to have it for lunch today. I think it's good hot or cold. This made 3 portions if you are using it as a meal. I bet it'd be good if I had added shrimp too!
So yes Megan, it was so good like you promised and I have no clue why it took me this long to have it for the first time! :) And thank you also to my friends for helping me learn how to say quinoa - prounounced: keen-wah!
I absolutely love finding different recipes for quinoa! This one looks so yummy and easy to make for lunches for the week!
ReplyDeleteHaha so glad you finally listened to me and liked it! :) Your recipe sounds tasty - I'll have to try that one next.
ReplyDeleteI love quinoa and I love the Greek flavors you added!
ReplyDeleteI love quinoa, thanks for sharing this recipe : )
ReplyDeleteI make quinoa all the time! One of my favorites is to saute onion and garlic in olive oil. Then add chicken broth and quinoa. I throw in frozen broccoli and let the quinoa cook as normal. At the end I add cheese and it's like a brocc mac and cheese! I've also added uncooked diced up chicken right before I add in the broth/quinoa/brocc.
ReplyDeleteYou should try this recipe - it's a favorite around here but it makes a lot! http://www.annies-eats.com/2012/11/05/mexican-quinoa/
ReplyDeleteLove me some quinoa! I've never gotten good about adding yummy stuff in though, may have to try this!
ReplyDeleteI love quinoa and will need to make this recipe asap
ReplyDeleteBryce and I tried quinoa mac-n-cheese once and really didn't like it. We've never tried it since then, but I'm thinking we need to give it another shot!
