Cooking This Week

Well between last week and this week, this is what has been happening. 

1. Shrimp Red Curry - the kids loved this and it was super easy. First time I've ever made it. As always, I add more shrimp than it calls for. 

2. Baked Potato Bar - I like to do this on Sundays because I'm never home for 1.5 hours prior to dinner to cook the baked potatoes. 

3. Beef Vegetable Soup - I made this on Sunday and we are had it last night. Making stuff on Sunday for Monday's dinner has been insanely helpful for me to get through baseball season. I didn't really use a recipe for this but this is what I put in it and I let it simmer all day:

- 2.25 pounds lean ground beef
- half an onion chopped
- frozen bag of veggies
- half of a bag of frozen cubed hashbrowns
- box of beef broth and added about another cup of water
- big and little diced tomato cans
- salt, pepper and Italian seasoning

4. Beef Enchiladas are happening at some point this week

5. Sausages on the grill with red/orange peppers, mushrooms and onions
