Well I had a couple requests for the Pineapple Mojito Recipe so I figured I should post! Okay so this is the story - I kinda made it up. Basil (the Thai restaurant at the bottom of our building) evidently brought these up to our pool party on Saturday and Kevin and I heard how tasty they were. So we were determined to make them for our day on Sunday!
I went searching for recipes with the ingredients I had. Finally I just hoped what I had would work. I mean seriously how could it not work with fresh mint, brown sugar, liquor and pineapple juice?!!
Pineapple Mojitos
1. In a shaker, crush 10 mint leaves with 2 teaspoons of brown sugar and 6 chunks of pineapple at the bottom. I didn't have this pineapple so I just added a little pineapple juice.
2. Add 4 oz. of dark rum - let's be honest - I just poured some in there and it worked out.
3. Add a couple ice cubes and shake it!
4. Fill your tumblers with crushed ice and pour the mixture in.
5. Top with pineapple juice (I used only one of the little cans in the 4 pack from Trader Joes)
(this was enough for 2 - 16oz tumblers)

what a great recipe! Mojitos are my absilute favorite drink. This summer I've been trying out various versions of faux-jitos and have discovered how amazing ginger beer (like a stronger version of ginger ale) works as a substitute for rum. But I think if you added a splash to a regular mojito it would be delish!

ReplyDeleteIt's really similar to yours. This one uses a dash of club soda, which gives it a little hint of bubbles. Cheers!!
I'm SO making these soon. They look incredible. Mom grows mint like kudzu at her house so I'm going to ask her to root some for me so I can get my own batch started!
