This year I did! I got a corned beef from the grocery and figured out details as it got closer. Here's how I did it so I can remember for next year!</font></div><font face="Georgia"><img id="id_6b5a_1685_3dac_2475" src="https://lh3.googleusercontent.com/d/105ri14Fe07jm3MTsMwhmXmU7lTRmQ2UN" alt="" title="" tooltip="" style="width: 353px; height: auto;"><br><br>Ingredients:</font><div><font face="Georgia">1. Corned beef</font></div><div><font face="Georgia">2. Head of cabbage, sliced in wedges</font></div><div><font face="Georgia">3. Half of a sweet onion, chopped loosely </font></div><div><font face="Georgia">4. 2 stalks of celery chopped in big chunks</font></div><div><font face="Georgia">5. A bunch of carrots, chopped</font></div><div><font face="Georgia">6. Red potatoes in a steamable bag</font></div><div><font face="Georgia">7. Can of Guinness</font></div><div><font face="Georgia">8. Can of beef broth</font></div><div><font face="Georgia">9. Mustard</font></div><div><font face="Georgia">10. Pepper</font></div><div><font face="Georgia">11. Shredded cheddar</font></div><div><font face="Georgia"><br></font></div><div><font face="Georgia">Directions:</font></div><div><font face="Georgia">1. Take the corned beef out and rinse it then pat dry. </font></div><div><font face="Georgia">2. Coat the fatty side with mustard then add the seasoning packet that came with it. Then I patted a bunch of pepper on top. </font></div><div><font face="Georgia">3. In a big dish put the onions, celery, carrots on the bottom. Place the corned beef on top with seasoning on top. Pour the Guinness and beef broth around the meat. </font></div><div><font face="Georgia">4. Cover with foil. </font></div><div><font face="Georgia">5. 325 degrees for 3.5 hours </font></div><div><font face="Georgia">6. Take it out and add the cabbage wedges to the dish. Cover and cook for another 30 minutes covered in foil. </font></div><div><font face="Georgia">7. Check it. The meat should fall apart. If it doesn't, put it back in for another 30 minutes. </font></div><div><font face="Georgia">8. Take it out, take the foil off and let it rest for a bit. </font></div><div><font face="Georgia">9. While that's resting, steam your potatoes and put them on a sheet pan. Smash them and add some salt and cheese. Pop them in the oven for about 10 minutes at 400 degrees. </font></div><div><font face="Georgia">10. We picked Molly Anne up at 11am, and I tried to work. It was an adventure of a day. We also had a guy come over to fix our dryer and he told us we needed a new washer. I had a bunch of work stuff that day too so I truly was a zoo. It was what it was though. I took two pictures. Their menu and a picture of TC and I. We got to see the second half at home. So awesome they won the ACC Championship! Let's be honest - it's really Julie and I. I couldn't do it without her!</span></div><div><span style="font-family: georgia;"><br /></span></div><span style="font-family: georgia;">Molly Anne:</span><div><span style="font-family: georgia;"><br /></span></div><div><span style="font-family: georgia;">She is still swimming a 2-3 days a week on her year round swim team. </span></div><div><span style="font-family: georgia;"><br /></span></div><div><span style="font-family: georgia;">I also signed her up for a private lesson at Charlotte Aquatics (at the same time Grady goes) to work on her strokes. She isn't getting a lot of one on one help on her strokes at the year round place and I sorta realized that she wasn't getting better and faster. She has already seen such a difference from Charlotte Aquatics. You can't keep practicing bad habits and that was happening. </span></div><div><span style="font-family: georgia;"><br /></span><div><span style="font-family: georgia;">She is enjoying Girls on the Run this Spring. I'm helping coach on Wednesdays. It's quite a commitment to do with my full time job but I do understand that the years are short and she wants me to be there with her. So, I make it work. The 5k run at the end of April will be great for the girls. This program is really wonderful and empowering for grades 3-5 girls. </span></div><div><span style="font-family: georgia;"><br /></span></div><div><span style="font-family: georgia;">Tennis is still likely both of my kids favorite part of their week with Coach Eddie! They LOVE tennis!</span></div><div><span style="font-family: georgia;"><br /></span></div><div><span style="font-family: georgia;">------------</span></div><div><span style="font-family: georgia;"><br /></span></div><div><span style="font-family: georgia;">Grady:</span></div><div><span style="font-family: georgia;"><br /></span></div><div><span style="font-family: georgia;">Grady is back to swim lessons at Charlotte Aquatics. Gotta get him ramped up for Summer Swim Team and for going to away camp this summer so I'm not a nervous wreck! I feel confident he could save himself at this point (I felt that way last year) but I want to be really sure about it! Swimming is non-negotiable. I always say that Molly Anne could definitely save me at the beach. I want Grady to get to that point too!</span></div><div><span style="font-family: georgia;"><br /></span></div><div><span style="font-family: georgia;">Baseball is back in action for Grady. He has a great team this year full of friends of friends and he's very excited. He is doing coach pitch this season!</span></div><div><span style="font-family: georgia;"><br /></span></div><div><span style="font-family: georgia;">And yes, Tennis is a big highlight for Grady as well. He LOVES Coach Eddie! I will also say - tennis has been fantastic to improve Grady's baseball game. Grady almost instantly started making contact in baseball and I know it's from the hand eye coordination he has learned at tennis. Tennis is such a great sport.</span></div></div><div><span style="font-family: georgia;"><br /></span></div><div><br /></div><div><span style="font-family: georgia;">As always - I know it's a lot. But when we stay busy, we stay out of trouble. We learn good things about being on a team. About exercising to keep our heart healthy. Molly Anne is 8....in 8 more years she'll be driving herself to all of these things. I cherish the time in the car with both of them....we have GREAT conversations as we drive around. Grady and I practiced hitting baseball (we used tennis balls) and we've been doing that a few times a week. He's obsessed. We've also been playing soccer almost every day. Got some volleyball in today with Molly Anne. It was a beautiful day to be outside. Grady started back at Charlotte Aquatics about a month ago. Getting him ready for summer swim team and pool/beach this summer. He's also going to an away camp and I want to mentally know that he's solid near water with his swimming abilities. We had a grande time staying up chit chatting with she and her husband Brett. Molly Anne and Grady loved seeing it. And we had met Grady a bunch of times at that point and Kevin and I really liked him. So, now we have a Grady. I got the email from UPS that they were unable to deliver while I was driving into our hood. Went to lunch at Kid Cashew in the dilworth area of Charlotte with a friend yesterday. She's in the same industry as I am, also with a civil engineering degree and it's always great to catch up with her. Lunch with friends and work peeps is my jam. So here's what I've learned. </font><div><font face="Georgia"><br></font></div><div><font face="Georgia">Wal-Mart + is $98/year but you can get it for $49 at different times of the year. Wal-Mart plus is when you can get free delivery at a set hour that you choose during the day. I think you have to order about 4-5 hours ahead depending on how busy they are. You get your delivery within that one hour time frame you chose by someone in a random car kinda like Uber but these folks get paid by Wal-Mart to do the delivery. And...you have to tip. I usually do $5 or if it's a big order $10. I don't do 20% of the order because that is just crazy and no one I've talked to does that either. These folks will put your order in front of your garage, on a side porch or on your front door step. </font></div><div><font face="Georgia"><br></font></div><div><font face="Georgia">Wal-Mart + In Home is an additional $40/year. But the key here is that you do not tip. Also, a Wal-Mart employee does the drop off in a Wal-Mart van and they'll put it on your doorstep or bring it in to your kitchen for you. Here are the cons - you have to pick a 9am-1pm or 2pm-6pm order delivery window. I'm never home for those four hours straight ever. I did the 30 day trial and I couldn't use it one time over those weeks.</font></div><div><font face="Georgia"><br></font></div><div><font face="Georgia">So back to regular ole Wal-Mart + for me. Everyone on the mom's group on FB spoke so highly of her. I've seen her a couple of times and really like her. She complimented my skin this time and told me she could tell I had really taken care of it. </font></div><div><font face="Georgia"><br></font></div><div><font face="Georgia">I must admit...it's hard for me being at the beach all summer but I have been very good about using face sunscreen every day. I also try not to part my hair when I'm in the sun. Yes, I'm bad about wearing a hat. As my kids have gotten older and one of them can do their own sunscreen, I've been wearing more sunscreen. I know that's ridiculous but it's true. </font></div><div><font face="Georgia"><br></font></div><div><font face="Georgia">Anyway, back to this visit, she noticed my skin was dry and suggested <a href="https://rstyle.me/+cwxLuOIwVoAWGRbM8lX0xg" id="id_8a8b_2812_5161_c567">this body wash</a>. So far I really like it. It's kind of boring. I definitely prefer my Method body washes for smell but I also don't want dry skin! I got my act together to pick up the kids from their half day on Friday. We were going to go on Friday but I didn't have it in me. The kids had off today so we wanted to make a long weekend. We ended up with a good weekend anyway. </font></div><div><font face="Georgia"><br></font></div><div><font face="Georgia">We were able to see the boat lift which was just put in. As you can tell, it's still not finished. We have to get power out to the lift, it needs to be evened out, a panel needs to be swapped from wood to metal etc. They shifted our dock and the pilings over to make room for the lift. I volunteered at my friend Ashley's widow outreach project. She has a flower business and her creations are stunning. In 2021 she started putting together arrangements for widows in the community. It has built to now over 1,000 in the Charlotte area receiving flowers, gifts from local businesses and a card showing that they are loved. Then Hilary and I got to go deliver a bunch of arrangements. It is such a special event and I'm thankful I got to participate. We can sit back and judge but there's usually always more to the story on why people do things. </font><div><font face="Georgia"><br></font></div><div><font face="Georgia">The kids had Ms. Becky watch them both when they were babies. We LOVE Ms. Becky and she taught me so much about being a Mom. She never meant to I don't think but she was full of good information and I always tried to listen. As long as you have good intentions, all should be good. </font></div><div><font face="Georgia"><br></font></div><div><font face="Georgia">Isn't that something? She's spot on and I think about it often. </font></div><div><font face="Georgia"><br></font></div><div><font face="Georgia">It came up recently because I sent Grady to school and then the school nurse called me and told me he had a he fever about 4 hours into the day. I felt terrible for him and for the fact that I may have exposed other kids. But I didn't know! And I didn't have bad intentions sending him to school that day. I honestly just didn't have a clue he didn't feel good. </font></div><div><font face="Georgia"><br></font></div><div><font face="Georgia">But he got it from a friend then two other boys got it. And I felt so much guilt over the whole thing. They also could have gotten something by going to Target or wherever. I mean it was January and at school with 16 </font><span style="font-family: Georgia;">kids in the class. Don't worry I didn't beat myself up too much. Came home late then rode up to Indiana for the day on Tuesday. It was a good day and productive work wise.
